COFFEE HUNTERS STORY

While Kotowa’s “Geisha Natural” undergoes a processing method in which the whole coffee cherries are simply left out to dry, “Geisha Washed” uses the “washed method”, a traditional processing method which after the harvesting most of the pulp is removed from the cherry then washed and finally sun-dried. The Grand Cru plot “Rio Cristal”, situated at the high elevation of 1,900m, has large temperature differences between day and night allowing the coffee cherries to leisurely ripen and produce high-density beans. Coffee cherries are harvested by skilled cherry pickers one by one. The cherries are removed from the beans, washed by the translucent spring water on the farm and then 100% sun dried. Then the coffee is rigorously screened by size, density, color and goes through a hand-sorting process then, transported by air to Japan to maintain freshness. In this way, “Geisha Washed” can be finally enjoyed, after taking a lot of time and effort in all processes and it is handled with extreme caution so as not to degrade quality.

While the lemony scent of Geisha is its main characteristic, the coffee possesses a moist sweetness similar to madeleine with milky and thick mouthfeel. The flavor and acidity is luxurious, and its crystal transparency is just like refined sake. Just like strong citrus growing in the fresh grassland, the straight, well-defined acidity spreads through the mouth like a sparkling wine. It is very transparent, light, with smooth body. It features characteristics of various flavors such as jasmine, lemongrass, and pine that are pleasantly complex yet balance the overall impression.

2018

Fresh top note of lemongrass and rosemary, sweet flavor of honey and the umami like a dashi of mushrooms. The harmony of these 3 factors combined resembles a string trio.

Flavor of passion fruit and pears gradually spreads in the mouth with the aroma of jasmine, winter Daphne and lemon glass. A delicate, translucent acidity with lingering aftertaste.
